Raw Summer Roll 

Raw Summer Roll

This slice was served up at the last Joy Solution workshop and was a hit, so we thought we would share the recipe with you. It has been lovingly adapted from the  "One Minute Slice"  by the delicious dessert blog Wholefood Simply  (Make sure you check out all the other delicious and healthy desserts there).   It really is easy so easy and quick to make. 

Ingredients

6 tablespoons Nut butter (peanut and cashew work well together)

3 tablespoons coconut oil (slighted melted)

3 tablespoons raw honey *

2 tablespoons cacao  or cocoa or carob

pinch of salt

¼ cup of desiccated coconut

1 tablespoon chia seeds

1 to 2  tablespoon of goji berries

1/2 cup mixed nuts - almonds, cashews and macadamias, crushed

(Put them in snap lock bag and crush them with a rolling pin)

Place all ingredients except for the crushed nuts into a medium sized bowl and mix until well combined. Stir in the nuts.

Pour the mixture into a lined loaf tin. Place in the fridge to set.

This slice only takes an hour or two  to set.

Store in the fridge as it will melt at room temperature.

*you can use maple syrup or any other healthy liquid sweetener  instead of the honey
